Boondi Laddu

Ingredients -
For Boondi:
- 500 gms – Besan
- 1 litre – Water or Milk
- 750 gms – Ghee/Oil (for frying)
For Sugar syrup:
- 750 gms – Sugar
- 4 cups – Water
- 10-12 – Saffron Flakes (soaked)
- 1/2 – Cardamoms Power
Other ingredients:
- 1 cup – Dry Fruits (chopped)
- Boondi Strainer or Fryer of Medium Sized Holes
Cooking Directions -
- Add water or milk in Besan and make a batter. You add water or milk little by little carefully to get the batter consistency. It should neither be too thin nor thick.
- Heat oil/ghee in a pan and pour a little batter on the Boondi ladle and gently tap it. Tiny droplets of batter will fall into the hot oil. Fry till golden brown, drain and remove. Repeat the process for the rest of the batter.
- Prepare sugar syrup of one and a half thread consistency by boiling sugar and water.
- Add saffron water. Mix the Boondis, syrup, dry fruits and cardamom.
- When the mixture still lightly warm, prepare Laddu.
- finally, Boondi Laddu is ready. Serve the Laddu or store in an airtight container once cooled.
